4 cups all-purpose flour, plus more for work surface
2 cups Cheddar cheese
2 tablespoons baking powder
1 teaspoon baking soda
1 teaspoons salt
2 tablespoons sugar
1 1/2 sticks unsalted butter, cut into pieces
1 1/2 cups buttermilk
- Preheat oven to 450 degrees. In a food processor, pulse flour, baking powder, baking soda, sugar, and salt to combine. Add cold butter and cheese. Pulse until misture is a course meal, with a few pea size pieces of butter remaining. Add buttermilk and then pulse until dough is moistened.
- Turn dough into a lightly flour work surface. Knead to combine. Roll with a floured rolling pin to 3/4 inch thickness. Cut with biscuit cutter.
- Transfer to baking sheet, 1-1/2 inches apart. Brush top and sides of rounds with melted or spray butter. bake until biscuits are puffed and golden, 12 - 15 minutes. Done.
